Instant Pot Vegetable Soup

Ingredients

¼ lb. ground or cubed beef, turkey, or sausage

1 Tbsp Montreal steak seasoning

½ Tbsp Italian seasoning

2 bay leaves

2 cups beef broth

1 can 15oz tomato sauce

1 can 15 oz diced tomatoes with basil, garlic, and oregano

1/3 head of cabbage, chopped into 1” squares

6 cloves garlic, minced

1/2 cup onions or shallots, chopped

2 potatoes, sliced thin or in ¼“ or ½” cubes

4 large carrots, peeled and cut into 1/4” rounds or chunks

4 ribs celery, sliced 1/4” thick

1 cups mixed veggies (peas, corn, green beans, limas, etc.)


_Optional:

1 cup kale, chiffonaded or chopped into bite-sized or smaller pieces_

Directions

Sprinkle salt & pepper on the meat, then brown it. If it’s ground, break it into smaller pieces.

Place all of the other ingredients in your Instant Pot, and stir well.

Put the lid on and cool for 25 min on the Soup setting.

After cooking, wait 10 minutes, then release the remaining pressure.

Remove the lid and stir well. Taste and add additional seasoning , if necessary.

Serve.
